Words cannot describe how nourishing and flavoursome this soup is! This soup is jam-packed with benefits for the body, especially as the cold damp winter nights are creeping in! Carrots provide a range of health benefits, from improving blood pressure to protecting eye health. Cooked carrots have a higher level of beta-carotene and phenolic acid than raw carrots. Ginger contains several medicinal compounds… It is great for relieving stomach complaints, nausea and calming a sore throat. Turmeric has powerful anti-inflammatory effects and is a very strong antioxidant.

Now that is my kind of medicine!!!

This soup makes for the perfect winter-warmer.

 

Carrot, Ginger and Turmeric Immune Boosting Soup

Makes: 4 bowls

 

INGREDIENTS

1 tbsp olive oil

450g  carrots chopped

1 onion chopped

1 tsp grated fresh turmeric

2 tsp grated fresh ginger

1 garlic clove

750ml vegetable stock

1 tsp pure honey

Sour cream

Pumpkin seeds to garnish

 

INSTRUCTIONS

 

In a large pot, heat olive oil and add chopped onion, chopped garlic, ginger and turmeric and sauté until soft.

Add chopped carrots, honey and squeeze of lemon juice

Pour in all of 750ml of vegetable stock, simmer and cover for 15-20 mins

In batches blitz your soup until smooth

Pour in bowl and swirl in a tsp of sour cream/greek yoghurt and garnish with pumpkin seeds
