Are you someone who loves their Chinese Takeaway but it goes against your ‘Healthy’ regime! Well below is a much healthier version of a popular Chinese dish…all the flavour without the guilt!! If you have ever wondered how the chicken is so tender in takeaways, well wonder no more as the secret to tender ‘melting’ chicken is in this recipe (it’s all in the marinade)!!
If you are not a fan of seafood just omit the prawns …it tastes amazing either way!!
Chinese Special Fried Rice
Serves 4-6
Ingredients
2 tbsp Sesame oil
2 tbsp Cornflour
2 tbsp Water
2 tbsp Dark Soy Sauce
1 Red Pepper
1 Yellow Pepper
I Red Onion
2 Medium Carrots
1 Garlic Clove
3 x Eggs
1 cup frozen peas
3 x Chicken Fillets
200g Cooked Prawns
4 cups of cooked brown rice
Curry Sauce (Optional)
Method
In a clean bowl/container mix cornflour, soy sauce and water together. Slice chicken fillets and add to the soy mix, coat the chicken and refrigerate for 30mins.
Chop Peppers, onion and carrots and grate 1 clove of garlic.
Add 1 tbsp of Sesame Oil into a hot wok/pan and fry chicken until cooked through, then remove from pan.
Whisk 3 eggs in a bowl and add to pan – scramble at a low temp and remove.
In a clean pan add more sesame oil and add the chopped vegetables and garlic. Saute until soft.
Add frozen peas and heat through.
Add cooked brown rice, then egg, then chicken and prawns (if using).
Heat through and serve.
N.B. You can add additional Soy Sauce before serving or Curry Sauce to get that authentic Chinese flavour.
