Who doesn’t crave comfort food as the winter takes hold?  Try this delicious, easy to make, heart warming soup without any of the guilt!  This soup is another example of the delicious recipes we have as part of our nutrition plans here at Ozone!

 

Ingredients

  • 1 butternut squash, peeled and deseeded, cut into cubes
  • 1 largeonion, roughly chopped
  • 4 tbspolive oil
  • 1 tsp smoked paprika/pimiento
  • ¼ tsp chilli powder
  • 1 litre/2 pintschicken stock
  • 1 clove of garlic
  • salt and black pepper for seasoning

Method

  1. Preheat the oven to 200C/180C Fan/Gas 6.
  2. Slightly drizzle butternut squash cubes with olive oil and roast in the oven for 30 minutes.
  3. Put olive oil in saucepan and add sliced onion and garlic, sauté until soft. Add spices.
  4. Add in roasted butternut squash & the stock, simmer for 10-15 minutes
  5. Remove the saucepan from the heat and blend the mixture until smooth. Return to the heat to warm through and serve hot

Add a small dollop of Crème fresh or natural yogurt
